Baked Sweet Potatoes

This colorful variation of a classic baked potato is a good way to sneak lots of fresh veggies into your meal (and your little eaters’ mouths). 

Bonus points if you can use local sweet potatoes, onions, garlic, tomatoes, and spinach! 

Kids not into lentils? Don't have spinach? Try any number of toppings - yogurt, beans, some thawed corn or peas. If you have little ones at home (or don't) and need dinner fast, you can also try microwaving your sweet potatoes. Put them on a microwave safe plate, prick them with a fork, and microwave on high for 5 minutes. Check with a fork - if it isn't soft enough yet microwave further. It might take up to about 10 minutes depending on the strength of your microwave, and how many sweet potatoes you are cooking.
