Need a fun and interactive way to involve your kids with meal prep? Make taco cups!
Prepare the toppings (tomatoes, snap peas, cucumbers, taco meat, cheese, lettuce, peppers, ranch, taco sauce, anything goes) and have kids scoop what they want into their cups. Then, cover the cups with cling wrap and have kids give ‘em a shake - be sure kids cover the tops of the cup with their hands! Finally, dump the cup contents over crushed tortilla chips or into a tortilla shell. Yum!
If you’re a childcare provider, this recipe is a great way to let kids be active in the kitchen, while only deciding on and touching their own portions.
